Black Bean Burgers18

Directions:

These totally vegetarian burgers are a staple at most Tex Mex restaurants and they're a perfect treat for summer. These serve really well with salsa as a topping and are a great alternative to the typical beef or soy patty burgers. This typically creates 4 to 5 burgers per a can of black beans, which was more than enough for me and could be stored in tupperware or aluminum foil. Let's get started on this South of the Border treat..

  • Cut about half of an onion and dice into small chunks. Keep the other half of the onion as you will be using it to dress up your burger.

  • Take out black beans from can and properly wash and rinse them. Dry them as good as you can because you want to get out as much moisture as possible.

  • Take the black beans and put them into a deep pot or dish and mix in the chopped onion, the garlic powder if using, salt, pepper, cumin and any other herbs or spices you wish to use. Lastly add the bread crumbs.

  • Mash everything together so that the black beans become a brownish clumping paste. You can use a blender or a food processor but you need to be really careful that you don't make it into a liquidy soup. If it's too liquid you'll need to add more black beans or bread crumps, and possibly flour. Once you've managed to get it to a dough like consistency you're ready to move on to the next step.

  • Divide up the mixture into 4 or more parts depending on how big you want the burgers. Take each part and roll it into a ball being careful as the dough will be slightly messy and hard to hold together. Firmly flatten each ball into a flat circular shape which will become your patties.

  • You should now have few patties that are flat and somewhat cohesive or sticking together.

  • Take each patty one at a time and place them in a small skillet with a few drops of olive oil. Lightly move the patties around and let them cook.

  • When they begin to brown on the bottom, flip them over to let the other side get cooked. You need to be careful when flipping them because they are extremely flimsy and can fall apart. If they do fall apart, you can recollect the pieces and repeat the process of forming the patty taking extra caution this time around.

  • When all patties are cooked, remove them from the skillet and place on a plate or tissue paper to soak up the excess oil.

  • Heat up the burger buns to toast them, and remove them and dress with condiments, sliced tomatoes, lettuce, and any other seasonings or vegetables you desire. Place black bean patty on top and close with top portion of bun.

  • Enjoy!

They taste great, and as said before in place of tomatoes and lettuce you can serve them with chunky style salsa for more of a TexMex flavor.

Have you tried this with the top type of olive oil? Cold pressed olive oil is superior in taste so even on a buger will make a big difference! Check the difference between types of olive oils here:
